We will be cruising next year with my 17 years old niece but without her parents. What do we have to bring with us beside her passport ?
Will an authorization letter written and signed by the parents be enough ?

I'm not sure which cruise line you are on but I believe all of them have a parental consent form.
We are taking our daughter's friend on a cruise on Norwegian & their parental consent form is available on their website.
I suggest you call your cruise line & ask them how to access the form they use. If you can't find one, you can check out the one that Norwegian uses (see link below).
Carnival and RCI do not have a form. You will need a notarized letter signed by one of the parents authorizing you to travel with the child. You will also need the letter to state that you are authorized to make decisions on medical care should an unforseen accident occur. You must have the letter notarized!!!

Well since the other cruise lines do not offer a form, you can use the one on NCL's website & change the wording to match the cruise line you are on. The NCL form pretty much covers all of the necessary information that jmel21 said needs to be included so you should be set!

All great advice -- yes, you'll need a letter from parents authorizing you can travel the child as well as letter re medical treatment. Also, make a copy of the child's insurance card to bring with you.
