Here is a list I pulled off the internet..I pared it down a bit.. but, if we all brought all this, we would pay a fortune in baggage fees, but scan the list and see what is appropriate for the 2 of you, that makes sense.
The Essentials
airline tickets or e-ticket confirmation
cruise documents
passports and visas or proof of citizenship (if needed)
vaccination certificate (if required)
driver’s license and auto insurance card – in case you decide to rent in one of your port of call
medical insurance cards and medical history (especially if traveling alone)
copy of prescriptions and list of all medicines you are taking
another picture ID – if you don’t take driver’s license
credit cards
ATM card
pre-paid phone card
cash or travelers checks and receipt (keep separate)
3 copies of airline tickets, cruise tickets, passports/visas, itinerary – the first set to be left on your carry on bag, the second set to be left in your checked luggages, and the third set to be left with someone at home. Alternatively, you can scan the documents and email an electronic copy to yourself so that you can access them from any computer through the internet.
Plug adaptors and converter (if needed, ask the cruise line). Electric devices can handle multiple voltages make sure that your electric devices say 110-240V, 50-60Hz (dual voltage plug in).

Kijjy - lists definately make them. Keep it simple, pared down to basic essential items that you would take with you on any vacation.

The one that stands out to me is making copies of your air line tickets, cruise tickets and passports and ID. I know I always worry that I'll lose my passport or ticket and have to go through the hassle of verifying identities. I would think copies would help if anything was lost.
