Default Travel to Cape Liberty in March

Hello, I have a couple of questions I hope you can help with.
We are an Australian couple in our 50s and have cruised once to the South Pacific(Dawn Princess). We are planning a trip to the US with a Caribbean cruise. We will be bringing our 26yr old daughter who has never left Australia before so want a bigger ship with more activity. We are considering the Anthem of the Seas to Southern Caribbean , Mar 3 2019.
Firstly I am worried about the possible effect weather will have on travel to NJ from Memphis in March. Secondly it seems the Western and Eastern Caribbean cruises are more popular, is that just because they are shorter?
