Sighseeing suggestions? Panama Canal

We are getting ready to take a cruise to Panama Canal on Island Princess Dec 5. I was wondering if anyone had any suggestions on things to see and do in any of the ports listed below.
Looking for something that is with low endurance, not a lot of climbing.

Acapulco, Mexico
Fuerte Amador, Panama
Puntarenas, Costa Rica
Cabo San Lucas, Mexico
Cartagena, Colombia
Oranjestad, Aruba
