sailing on the Amsterdam on Nov lst. We would like to dine in both the La Fontaine and Odyssey restaurants while on our voyage. When would we make the reservations and where? Should I be prepared to tip someone for making the reservations. Thanks.

You don't have to tip anyone to make a reservation!
The Odyssey is the Alternative dining room - you will be assigned a table in La Fontaine. If you want to eat in the Odyssey, I would suggest you check your daily program when you board the ship, see if there is mention where & when to make reservations and then do it. Depending how full the ship is and how busy they are in the Odyssey, you may only be able to reserve for one night.

On the Volendam, reservations for the Marco Polo dining were taken in person between 9AM - 11AM. I figured that meant make reservations in the morning for that same evening, but I was wrong. We were wait-listed for 2 nights -- with at least 25 people ahead of us on that wait-list.

When you say that you had to make reservations in person, was that at the Marco Polo itself, or did you place those reservations for the Marco Polo at some other desk? In other words, will I have to go down tot the Marco Polo to place our reservation?
