Default Chocolate Volcano Cake

I recently sailed on the Prinsendam and although this was my 4th HAL cruise I'd never tasted the Chocolate Volcano cake before. Does anyone have the recipe for it or a suggestion on where to find it?

CHOCOLATE VOLCANO CAKE
Pinnacle grill


Ingredients
- 3 lbs butter
- 2 lbs chocolate bittersweet
- 1 lb 4 0z sugar
- 10 whole eggs
- 10 eggs yolks
- 10 eggs white
- vanilla
- salt
- 13 oz flour
- 5 oz cocoa powder
- 5 tsp baking powder
- 3 oz grand Marnier
- 5 orange zest

Procedure

- Melted together 2lbs butter and the bittersweet chocolate (set aside )
- Mixed until fluffy 1 lbs butter and 1 lbs sugar
- add the whole egg and egg yolks one by one mixing about 30 seconds between each
- Add the melted butter and chocolate (need to be just lukewarm )
- Add the grand Marnier and orange zest
- Sift together flour ,cocoa powder, salt and baking powder
- Add to the mixture and mix for 3 minutes at high speed
- Make a meringue with the egg whites and the 4 0z sugar
- Fold into the chocolate mixture
- Fill the pinnacle dish with 7 oz of the mixture
- Bake at 190 degree Celsius between 15 to 20 minutes

ENJOY - too rich for me and especially when I had it at 10:30pm - chocolate at that late hour keeps me awake.

It is luscious!!! We just returned from b-to-b's on Zuiderdam and enjoyed dinner at Odyssey about 4 times during our time aboard. No dinner in Odyssey is complete for me until I savor Volcano Cake.
