Default Recipe for crab cakes

We ate dinner in the alternate dining room and it was great. I especially loved the crab cakes. I had gotten the recipe for them while on the cruise at a cooking demonstration, and made them once but have misplaced it. Does anyone else have a copy they could share with me. It is just a little different, so that others I have looked at in cook books and on the internet aren't quite the same.

Dear Crate,

Saw the demo last year on the Rotterdam.

Will look if I have it or ask my parents that accompanied us last year.

Otherwise, will try to get it again this year. We are sailing on the Rott VI at the end of the month. Will try to remember for you.

Thanks for looking or checking. I tried a recipe I found on the internet but it just wasn't the same as the one for the crab cakes from the cruise. We won't be going on another one again till late in September. This time we are trying Princess Cruise Lines.

Dear Crate,

I FOUND IT!

This is the Dungeness Crab Cake Recipe that I saw was demo'ed after the Kitchen Tour on the Rotterdam. It is by the Chef, Douglas Hope of the Pinnacle Grill at the Odyssey on the Rotterdam. Hope this helps you. I am writing it as it appears on the Sheet. I don't remember the demo itself or how big the cakes looked.

DUNGENESS CRAB CAKE RECIPE
Crab Cake Mix 16 cakes

Shallots 1 small diced fine
Garlic (Combine with Ginger) 1 clove chopped
Celery 2 tablespoons diced fine
Onion 4 tablespoons diced fine
Red Bell Pepper 1/2 fine dice
Ginger (Combine with Garlic) 1/2 tablespoon minced
Chives 2 tablespoons fine chopped
Thyme 1 teaspoon chopped
Dungeness Crab Meat 4 oz (Fresh or Frozen)
Eggs 1
Mayonnaise 2 tablespoons for Binding
Sambal Oelek 1/4 teaspoon (Don't remember what is)
Lemon Juice 1/2 Fresh Enhance Flavor
Worcestershire Sauce 5 drops
Panko Bread Crumbs-Japanese 3 tablespoons For frying crispy outside
Salt add to taste
Pepper add to taste

Mix all ingredients and form cakes.

Then pan fry in Vegatable Oil (Not Olive) till ready. Pan seal juices.
(I believe I heard him say you can add some butter to the Veg Oil to stablize the oil)

Serve with Thai Sweet Chili Sauce.

Hope this helps you. If I get to see it demo again on this upcoming trip, I will try to remember to taste it for you!

What a great sounding recipe! Sambal is a Vietnamese hot garlic and chili sauce - quite hot - hence the small amount. This recipe sounds like a keeper. Thanks for sharing it.

Thanks so much. That is exactly what I was looking for. I will save it as a word document so this time I will know where to find it. Thanks a million. It is the ginger and thyme along with the sambal oelek that give it a little extra kick that the other recipes don't, and the Thai sweet chili sauce on the side is so much better than the way some restaurants serve cocktail sauce or tartar sauce.

Can't wait to buy some more crab and make these up. Enjoy your upcoming cruise! I'm jealous.
