Excursions on Nieuw Amsterdam August 19th

We are scheduled for the 12 days Mediterrean cruise on the Nieuw Amsterdam from August 19-31. I am trying to get a few shore excursions booked/planned before we go can anyone give me some suggestions. I know booking through the cruiseline is always a good idea but I was thinking about planning your own excursions if possible for some areas.

Here is the itinerary:
Venice overnight
Split Croatia
Piraeus (Athens) Greece
Istanbul Turkey overnight
Mykonos, Greece
Kusadasi (Ephesus) Greece
Thira (Santorini) Greece
Katakolon Greece

We are doing the same cruise in September and the best rates for shore excursions available are through Ferry to Samos from Kusadasi, Ephesus Tours, Biblical Tours, Istanbul Tours, Athens Tours and they're doing our evening Bosphorus cruise followed by a whirling dervishes ceremony for Euro 50, our full day Istanbul including Blue Mosque, Egyptian Market,Grand Bazaar. Hagia Sophia and Topkapi Palace for Euro 37 and Ephesus complete with Terrace Houses for Euro 35.
