Dress code for dining rooms, just about anything as long as it is neat and looks nice, no shorts after 5pm except in the Buffet and Blue Lagoon. In the dining rooms, even the specialty ones you will see everything from really nice jeans to gals in dressy sun dresses and guys in sport coats. There are usually 2 formal optional nights, these nights there are more who dress a little nicer, but generally no one wears formals or suits. Pretty much you can do your own thing, that is what "freestyle" is all about.
If you are going to do shore excursions I would advise, you set them up ahead of time with a reputable company or book thru the cruise line. You may pay a little more thru the company but you can be assured of getting back to the ship on time and knowing the tour company has a good reputation.
Hope this helps a little, I am sure many others will give you ideas.
