Corkage Fees on the SEA

We just came back from a wonderful 5 day cruise on the Celebration. We had brought 4 bottles of wine, expecting to pay corkage fee. Our head waiter did not charge us anything. Can you tell me if we can take our wine on the SEA? Is the corkage fee a sure thing or might the head waiter allow us to give him the tip instead?
