Default Buffet or Dining on the "other" Cruise Lines

I am posting this on the NCL area, so hopefully I won't get blasted from the "Real Cruisers".
Background...my husband said he didn't ever want to go on a cruise because if he is on vacation he wants to wear very casual attire. We do have very nice formal clothing since for years we had season tickets to Dallas Sympony and the Summer Musicals. We still love the symphony occasionaly and go to a musical once in a while, but we just don't like getting all dresssed up anymore. We do not want to dress up on vacation. Been there done that...it just doesn't thrill us anymore.
Last year I finally talked him into the Hawaii cruise and he loved it. He loved siiting out on the balcony for "happy hour" and loved all the food in the buffet(you have to understand I am vegetarian so do not eat meat, chicken or fish. He is only "mostly vegetarian because I am the cook and do not make animal foods.)Anyway, so he had all the fish and chicken he wanted(I also hardly ever make dessert)...so he had unlimitted desserts at the buffet. The buffet food and the private balcony are the reason he is willing to go on more cruises. I did just book us on one of the NCL Sky's Bahama cruise, but would like to do something leaving out of Houston or New Orleans sometime.
So, now finally to my question. It looks like all the other cruise lines do not have the freestyle eating and have assigned dining. I did look at one line and it showed a 24 hour buffet and is the food good. Does anyone ever just eat the buffet and skip the assigned dining and on formal nights would we just have to lock ourselves up in our stateroom?

Princess has the Anytime dining. Eat anytime from about 1700 to 2200.

Yes, there are folks who just eat in the buffet. On a formal night, just go to the buffet and you will be fine.

They also turn the buffet into a bistro at night. Table cloths and waiter service. You can still dress in shorts if you want.

Royal Caribbean is also trying out their version of freestyle dining called my time dining. It is currently on some of their ships and suppose to be on most if not all of their ships by year end. From what I've seen they will have one floor that is "traditional" dining and one floor where you can eat when you want to eat. They also have a buffet that's available every night. Room service also has most of fthe items off of the diner menu if youw ant to eat on your balcony.

Aren't the choices of lines nice?

I believe all lines are now attempting a form of freestyle, but from our PRincess experience it just simply didn't work as well.
