Sun Trans-Atlantic cruise in April to Copenhagen

Anyone either going on this cruise this April, 2011 or have experience on it in the past? My husband and I are traveling on the 4/23/11 sailing and are looking for tips and ideas for shore excursions and doing the trans-Atlantic thing. We've never been on a ship 6 days straight with no ports of call! We stop in Punte Delgado (sp?) - Azores islands; Lisbon, Brugges, Amsterdam and Copenhagen. Any ideas are welcome.
