we have cruised with AidaBlu (ex Crown Princess) twice, in 2004 and 2005. It was very nice, but don't expect much of a trditional cruise. Aida call their ships "club ships". There are no fixed seatings for dinner, and food is served in all main dining rooms buffet-style - but the buffets are of outstanding quality. Try it! All ships have an alternate restaurant with table service and best cuisine. Therefore you will be charged a flat fee. AidaBlu has also one table service restaurant without surcharge, which will serve same food like the buffet restaurant next door.
All drinks (red and white wine, water, pepsi sodas) are free in the buffet dining rooms during their opening hours, and no tipping is neccessary - just if you want, you may tip a single person, or use a box at the front desk at the end of the cruise to tip the whole crew.
As all Aida ships are german language ships, all announcements are made in german only. But everyone of the crew understands und speaks english, in most cases better than german, so it should be easy to go around at the ship.
