The Love Boat Dream is one of my favorites. I've had it on the Dawn and Caribbean Princess, it is rich but a wonderful treat. Princess does have wonderful desserts.
1 pound bittersweet chocolate
8 ounces sweet butter
6 large egg yolks
8 egg whites
3 ounces lady Godiva chocolate liqueur
1/2 cup superfine sugar
3 tablespoons vanilla-flavoured sugar
Garnish
16 fresh mint leaves
1 ounce white chocolate
1 ounce milk chocolate
2 tablespoons strawberry piping gel
2 tablespoons bittersweet cocoa
Melt the chocolate in a double boiler. Remove from heat and add the butter. When the mixture is very smooth, quickly blend in the egg yolks and the chocolate liqueur.
Whisk the egg whites until very still, and then add the superfine sugar and flavoured sugar.
Gently fold the egg white mixture into the chocolate mixture. Pour into a heart shaped mold and refrigerate for at least 12 hours to set.
Presentation
Unmold the chocolate and place in the center of the plate. Garnish with white chocolate and milk chocolate. Pipe strawberry gel around the plate. Dust mousse with cocoa powder and garnish with fresh mint leaves.
My wife keeps hearing about the Love Boat dessert, does anyone out there have any idea what it is?

IIRC, this comes with a chocolate heart emblazoned with the Princess Cruises "Sea Witch" logo sticking out of it.

I thought it was likea mouse dessert-that is what it tasted like to me-just like all the lines carry-just on Princess they call it the Love Boat and it is heart shaped.
I did what I thought was a decent mouse at home. This is easier then the recipe you have here. What I did was take a box of chocolate instant pudding for 4 servings but instead of using 2 cups milk as the recipe called for-I used one cup milk and one cup heavy creme. I also added about an ounce of kahlua to it. (you could use any liquer you liked)
Then I topped it off with cool whip and chocolate shavings. Everyone loved it and said it was super rich.
My Mother was the firstly addicted to this on our first Princess Cruise, I finally tried it (I'm diabetic and was trying to be good) but, after I had my first taste of this, it became my desert too!!! Thank goodness for my insulin pump to adjust for the splurge but it was well worth it.
I'm am thrilled to have this to try and make her one... any ideas on the "crust" I think it was like a brownie.. with rice krispie texture to it...

I think it is good enough without a crust-but you could use crushed up oreos.
One thing though, your being a diabetic, you could use a sugar free chocolate pudding and still just add a dash of Kahlua to it. still use the cream, that won't necessarily run up your blood sugar but of course it is not so good for you heart-if you have high cholesterol. then use crushed almonds or pecans for your "crust." that ill give it a "crunch" and it won't hurt you nearly as badly as the oreos.
