Carry on restrictions and shore excursions

Just booked a cruise on the Caribbean Princess in March and wonder if anyone can help me with what the rules are now for what you can and can't bring on the plane in your carryon. Also we have booked 2 snorkling excursions. St. Maarten - golden eagle out island sail. St. Thomas- Champagne Catamaran trip. Has anyone done these trips and what did you think of them. Thanks
