Default Princess recipes?

We just got off our 3rd Princess cruise (this one was the 10 day Coral Princess Panama Canal) and I wonder if anyone would have their recipe for their *outstanding* Golden Apple and Peach Soup. It was cold and creamy and wonderful.

Also. I was reminded of how great their Fettucine Alfredo is--had it 3 times in 10 days! Does anyone have that recipe?

When we first saw your post we went to the Internet to see if in fact Princess did post their recipes. Well sure enough they did. However that was back in 2003 and the site has now been withdrawn. That's unfortunate for there are times when there are flavours present in ship food that we are not familiar with and would like to learn more about.

On the other hand, can you imagine a ship recipe commencing with:

Take 42 dozen eggs and.....

Here you go. From the Princess Cruises Courses A Culinary Journey cookbook. Enjoy.

Chilled Golden Delicious Apple and Peach Soup

2 cups Golden Delicious apples, peeled, cored and chopped.

1 cup apple juice or cider

1/2 cup orange juice

1 cup plain yogurt

2 cups fresh cream

1 tbs. honey

1/2 cup dark rum

cinnamon

nutmeg

2 Golden Delicious apples, quartered, peeled and shaped

2 peaches, peeled and diced

fresh mint

When in season, fresh peaches are always preferred. When peeling a peach, cut a small x in the bottom. Place the pach in boiling water for 1 to 1 1/2 minutes. Remove the peach and place it into cold water to stop it from cooking. The skin can then be pulled off with a small knife. When working with applie garnishes, squeeze the juice from one lemon into 2 cups of water. After cutting the apple, place the pieces into the lemon-water for approximatley 5 minutes. This will help prevent the apples from oxidizing and turning brown.

In a blender or food processor, puree the apples with the apple juice or cider until smooth. Set aside.

Separately, blend the peaches and the orange juice until smooth.

Reserve a small amount of the peach puree for garnish. Combine the remainder of the peach puree, apple puree, yogurt, cream, honey and rum. Mix well and season lightly with the cinnamon and nutmeg. Refrigerate well.

Serve the soup in a chilled bowl. Using a small ring, garnish with the diced peaches and top with shaped apples, mint leaf and drops of the peach puree. As a variation in presentation, the soup can be served in a dessert glass.
