Bunch o' questions

Some good friends are going on a family reunion cruise on the Caribbean Princess this August. I have not been on Princess in years, so have a few questions to help them out.
It is a 9 night cruise, so 2 formal nights or 3?
Any semi-formal nights?
How does their version of any time dining work?
Any particular activites on board that are not to be missed?
Is sushi served anywhere?
They are vegetarian. I know that all lines have veg in dining room. What about options on the Lido?
Phew..I'm sure that they will have more questions as they get closer to the cruise. They are SO ecited, especially since their dad is buying....I want to be adopted!

Thanks, Shark. They are so excited, but also a tad nervous...their first cruise. I know they will love it, but the more info, the less the nerves....hmmm....not good grammar there.

loved anytime dining never had a problem getting a table, never had to wait...

sushi buffet i had was awful... ok if you need a fix but few options and predictably dry rice (from sitting out as opposed to being made fresh just for you) about as good as getting a party platter from costco.

they always served a vegetarian indian food dish on lido which was consistently my favorite for lunch!
