I booked on Expedia.com, and unlike some of the web sites like iCruise where you only specify a category, it gave me a choice of specific cabins and I chose one.
The cabin number is noted in my written Expedia reservation.
Will I get that cabin for sure?
Or could they still stick me somewhere else in the same category?
If I get arbitrarily upgraded (still not completely clear on how this works) when would I know?

By booking a certain cabin number, you should end up with that one, less chance of an upgrade, but you just never know. Here is a link to some information about upgrades, hope this helps:
