Default Pre-Book or Pre-Reserve on Mariner??

I know it is possible to pre-book shore excursions... but what about the ice show, or alternative dining. Can I do either of these in advance?

As far as I know you have to be onboard to book both the alternative dining rooms and the ice show. In fact you will need to just pick up tickets for the ice show when they announce that they are available, I think it was like 2 days into the cruise. Just read through your daily compass for the day they release those, they are no charge, but seating is limited, so they put on a few shows, different times/days so everyone can have a chance to catch it. As for the dining room, just make reservations soon after you board, shouldn't be a problem.
