Breakfast is also served in the Windjammer Cafe as well... which is buffet type service. The same items are available in both locations... but they do offer waffles in the Windjammer... not in dining rooms.
The other option is room service.... for breakfast (no extra charge... just tip!!)
Breakfast is also available in your cabin through room service. We did this several times on Brilliance, and it was quite enjoyable. Initially, I was concerned that the food would arrive cold, but this was not the case. It was hot and quite tasty.
Yes you can ask for a table for 2 in the dining room during open seating for breakfast or lunch...but it is fun to share a large table and meet new people from all over the world! Either way, enjoy!

We eat in the dining room as aften as possible. We like to be served and meet new people at breakfast and lunch. Occasionally, the dining room may not be open for breakfast or lunch depending on the port and excursion shedules. We avoid the buffet because we eat too much and eat by ourselves. But we have had to eat breakfast there sometimes and do enjoy the omelet station and last year Galaxy had a Belgian waffle station, mmmm, yummy!
The only thing that can be a problem for breakfast is the service is a little uneven at times. We noticed it on the first cruise and a veteran cruiser told us that breakfast is the training shift. Not enough of a problem for us, though--we still enjoy it.
