Did you ever check online or look at your pre-cruise papers to see what they had you down for?

You can request a time, but if it fills up with folks who requested the time before you, they can switch times. Also, depending on the table size (say you picked a table for two) and they are all gone, then thye have to change your time.

When you get on the ship head to the dinning room and see if they can flip you back.

We have friends in the U.K. who just had last minute revisions to their dining time and they are VERY unhappy! So I know this can be frustrating but you need to ask for a change as soon as you board. Unless you checked online though (or with T/A) they can put you on the early seating. A request is just that, a request. Hopefully it won't put a damper on your special cruise though. We also enjoy late seating but have done the early seating on rare occasion and found out it's got it's advantages too.
