Definitely Dunn's River Falls & Prospect Plantation -- and be sure to bring a pair of SurfWalkers (R) for each person in your party. The tour of Prospect Plantation is quite interesting because the plantation occupies a whole mountain with several climatological zones suited to various combinations of crops, and they also do some very interesting demonstrations along the way. And the climb up Dunn's River Falls is truly a unique experience!
Donna did you go on the zip line? How did it look to you. I saw that Samantha Brown from the travel channel shoot down it - it looks pretty safe. Did you have any concerns at all?
There was only one platform that I felt a bit concerned on, but you are belted in the entire time, so it was safe, but you are pretty high up there, it was a gas!
Also my opinion that it is a tough choice. The falls has become easier to navigate in recent years, but the canopy tour can be a heartstopper sometimes.

The zip line was really fun, just completed that tour in Montego Bay. Keep in mind if your ship sails to Montego Bay and you choose the Dunns River tour, plan to spend 2 hours to the falls and 2 hours back from the falls in a cramped van with very limited shocks (road ways there aren't like here, lots of bumps, pot holes, etc.). Both tours are great, just killing 4 hours in a car from Montego Bay just to do the falls might be a bit much. The zip line is about 15-20 minutes by van from the pier.
I have been to Jamaica a few times. Once on a cruise, once for a 10 day stay.
The falls are great but from MO Bay I agree with others that the drive would be horrible. Heck the drive from the Airport was the worst part of out trip. The roads are always beat up, tore up, and completly pot holed. And the drivers are just about the nuttiest I have seen anywhere.
I have not zip lined but as a sky diver this never interested me. I would do the Zip line because of it's location from the ship. As a matter of fact I am going back to Jamaica agian on the Liberty of the sea in Oct. Might just try it with some of my girlfriends that have never jumped from a plane.

We really enjoyed the plantation tour in Jamaica. The grounds are beautiful and lots of great picture ops. The guides were young and fun and kept the group interested and having a good time throughout. There were even people on a horseback riding tour touring the plantation. That looked like fun, too. Jamaica is beautiful no matter which you decide to do. Just enjoy!
One thing I would like to say is that there are lots of people trying to sell you drugs in Jamaica. This was the first time we saw people being taken off the ship because they indulged. It looked like everyone associated with the person at fault had to leave the ship. It can't be worth it. It's a long trek home from there.
