After 2 cruises on the Vision OTS, I can attest that the service is the best onboard. I haven't stayed in an interior cabin, only balcony and jr. suite, so I can't really answer that part of your question. The staterooms I stayed in were well layed out and nice, so I would assume the inside cabins are similar.

My first cruise was on Vision. The inside cabin, where we almost always stay, is not as large as on Princess, but certainly adequate. My SO claims to be prone to seasickness. Since the least motion is found in the cheapest cabins, it's a double winner. The food and service are great.
