When your shore excursion says to bring a towel can you use ship towels or should I pack some?

You can take a ship towel. Just go get some from the pool.

Hi Gram,
Royal Caribbean ships will leave pool/beach towels in your cabin each evening. Just be sure to leave the used ones in your cabin and they will be replaced by 2 fresh ones, no need to go down to the pool. Be sure to return them, otherwise they will charge you the price of a new one.
