Yes, my gf and I have sailed on this ship twice; once on a 9 day Caribbean and the other a 10 day, most recently in April 2012; we love this ship and it's crew! Our staterooms were immaculate, just the right size; there were areas in some hallways where the carpets were a little worn, but let me tell you we had fun! I believe it is going in for an upgrade within the next year or so, but I am not sure of exact dates; but it is a wonderful ship and the crew and entertainment are top notch.
Sailing out of New Jersey is convenient for us, and our most recent visit the check in could not have gone any smoother.
You will absolutely enjoy it, just don't look down!
It really depends on what you're looking for. Keep in mind what one person loves, another will hate. So you're liable to get recommendations from those who liked it and get complaints from those who didn't. It's always important to find the right cruise for you, not for someone else. So with that in mind, it's always highly suggested to work with an experienced Cruise Specialist who can help you find the perfect cruise.
Now, with that said, we've been on 3 of the Voyager-class ships, including the Explorer of the Seas, plus we've spent probably 100 days sailing on RCCL cruises, so we're very familiar with them and that class of ship.
Will you enjoy it? Depends on what you like, how old you are, what your expectations are, whether you're a 'foodie' or not, how active you are, and basically what type of cruise you're looking for.
Overall, I would have to say that the Explorer of the Seas is a nice ship and will afford you a very nice experience.

According to the RCCL website she will undergo all the upgrades starting on 12/22/14.
