Eastern Caribbean, Explorer, excursion, & scub

We are booked on the Explorer of the Sea for June 30 for an Eastern Caribbean cruise with our 2 teen age children. Can anyone suggest any good shore excursions and other things to due at the port of Calls, San Juan, Labadee, St. Thomas, Nassau? Also I have my PADI certification for diving but our kids do not. In Cancun last year they got a resort certification for 15 days, can they get the same on the ship so that we do not have to book an excursion were we have to wait for them to go through the class.
