Cozumel suggestion

I just returned from Carnival's Inspiration to the western Carribean (Grand Cayman, Costa Maya, Cozumel and Belize). I made all of my excursions independent of the cruise line and was very happy with my decision. In particular, that of Cozumel. I had met Adrian Romero on a Cozumel message board when I was planning what to do and he had some great suggestions. He and his family have lived there for generations and of course is extremely knowledgeable about what to do and where to go. He owns a restaurant which is open in the evenings so has time during the day and offered to be our tour guide. Based on what I wanted, he took us to San Gervacio, toured along the more remote east coast and snorkeled at Chankanaab, Dzul Ha and Paradise reefs.
