shore excursions for small children

I'd REALLY appreciate some suggestions - we are booked on the Sea in May and will be visiting Cozumel, Roatan, Belize and Cancun (I think?). I have a 2yr old and a 6yr old. My 6 yr old son is really looking forward to seeing ancient ruins and wildlife (sea and land) I was considering a horseback trip for just myself and him. Most of the trips I find require that the children be older. Does anyone know of trips that will allow 6yr old?
Also any good beaches for the 2yr old, calm waters etc. Maybe a little shade?

I haven't been there yet but we are going to Chankanaab park in Cozumel. From what I''ve been told by people who have been there it is very kid friendly. Sorry I can't help with the other ones. We're doing the cave tubing in Belize but our tour has a minimum age requirement of 10.
