I was on Destiny in February. I still miss being on the ship.
My DH and I only booked one excursion through the ship. That was on Dominica for the Rainforest Aerial Tram tour. It was fantastic.
St Thomas we caught a cab and went to Coral World/Coki Beach. We got there before the crowds and got back to the shop/dock area in plenty of time to go up to Paradise Point and shop before getting back on the ship.
Barbados we caught a cab and went to Harrison's Cave. Wonderful place. The cabbie waited for us to finish the tour then we went to Malibu Beach which was 10 ride from the ship.
Aruba - We caught a cab and went to the Jolly Pirates http://www.jollypirates.com/ Its a pirate ship ride, snorkle, lunch cruise. The cabbie picked us up and we got back in plenty of time to roam around Aruba to our hearts delight.
Puerto Rico - Enjoy Old San Juan. Its fantastic.

Mitch - a lot depends upon what you and your family want to do.
In St. Thomas if you want to swim and snorkel i would suggest that you grab a cab to Sapphire Beach - very nice, if you want to take a little time and make an effort, get yourself over to St.John Island - the beaches are breathtaking and the snorkeling is amazing. You have to grab a cab at the pier to take you to Red Hook Harbor where you grab the ferry over to St. John Island go to www.vinow.com for ferry schedules and pricing. You can do it on your own- It will cost a little less than the ships excursion, but your time is your own.
San Juan - take a ships tour up into the rainforest, this place is amazing. Wandering around Old San Juan is very interesting - not sure if the teens would like it though.
Aruba - rent a jeep and explore
