Need help with excursions, our first cruise

Will be sailing Carnival Conquest 1-11-09 to Montego Bay, Grand Cayman Islands, and Cozumel. We want to snorkel, parasail, and possibly rent a jeep or car to drive around and maybe stop at a beach to just be alone. I have seen a lot of info on different boards of all these and thought posting this requesting suggestions might help me narrow down what to do and where. All suggestions much appreciated. We are so stoked for this. Will be celebrating our 25th wedding anniversary on this trip and want to make the very best of it all. Thanks all!

You could go snorkeling at the Stingray Sandbar in Grand Cayman~I've done this twice and loved it.

In October in Cozumel I took a taxi to Paradise Beach and parasailed for $55 (not sure how much it is for two people.) Nice beach and awesome experience.

No parasailing in Mobay. Too close to the airport. Try Doctors Cave beach. A quick cab ride from the port. $5 to get in.

If you've never snorkeled with the Sting Rays in Grand Cayman, could be one of the highlights of your cruise, great expierence.
