Default cutlery

I am concerned about the use of cutlery and which fork, knife or spoon to use and when. Are the tables in the dining room set in such a way that one must know their finest ettiquette??? Any thoughts or comments about this matter?

Start with the flatware on the outside, and work in. But mainly, don't worry about it.

My policy, just a guidline.....be patient, wait for others to start, (we do this at home all the time. Just common courtesy). You can usually pick out someone at the table to mimic. But Andee was right, work your way in from the outside. It may appear intimidating at first, but not rocket science. If someone is gonna judge you for using a wrong utinsil, then they have a problem, not you. Enjoy your meal, it will taste the same as theirs!

Carnival on our last cruise the waiter only gave you the silverware you needed for that course.

Besides the start-with-the-outside-and-work-in rule, this might help: if there's a salad-sized fork placed crosswise above your plate, that's your dessert fork. Anything small like a seafood fork you'll be able to recognize. Relax and enjoy!
