Excursions for wheelchair bound

We will taking a 12 day cruise on Carnival Spirit. I am wondering what
excursions would be recommended for someone who is wheelchair bound.
My Mom cannot walk long distances anymore and we have decided to take
a wheelchair with us for her comfort. What excursions would you recommend?
We will be spending time on Oahu, Maui, Kona, Hilo and Kauai?
