does anyone know a good site to find out about the excursions at the various ports

Most every cruiseline has a list, go there first and then narrow down your interests. From there , you can get more information by contacting venders directly if you wish to consider independent touring- extremely easy and superior tours in size and personal attention, smaller groups. Each city also has a visitor guide you can request.

Would it be safe to schedule tours when you get on the cruise or ahead of time.

I would book early. Many were sold out before the cruise, and I always seen a line at the excursion booth on our ship.

If you are looking at fligths- no, better to book in advance. Most everything else can probably wait until on the ship if that is your preference?

I say book ahead also - which I did. It got the money part out of the way prior to the trip. However, I held off on the floatplane due to my fright of it. I was encouraged to do this when we reached port by fellow mates - and I thought - they won't have any available and I can say - couldn't do - all sold out. However in Ketchikan I walked off the ship and got a flight (one of the last two seats available so they told me). If you are not like me - it will do you well to book ahead or you will miss an awsome flightseeing adventure. And others that took the helecoptor tours truly had a great time.
