Default Port Canaveral "Things To Do"

We will be staying in Cape Canaveral four days before our ship leaves. Other than Kennedy Space Center and the 'usual' Orlando attractions, does anyone know of other things to do and/or great places to eat? We will be staying at the new Ron Jon's Cape Caribe Resort which looks wonderful!!!!

If you are into NASCAR, drive up to (1 1/2 hrs) Daytona speedway and tour the museum. There is a really good restuarant at Ponce Inlet at the "inland" fishing peir/boat dock.
Port Canaveral - sailed out of 6 times ourselves - always stayed at the Radison. No good tips on restuarants as we have not done well with eateries in the local area. Eat light anyway so you can really enjoy the cruise cruisine.
