Default time zones

I am booked on infinity to hawaii next april I was thinking, since I have not been on a cruise that crosses time zones. How does this get handled on the ship?

They will usually adjust the clocks accordingly each day necessary and will post a reminder in the daily schedule to do so before you go to bed.
