On most Celebrity cruises you'll find a pretty broad cross section of age groups, and some families. The average age on a February cruise, when kids are in school, will be slightly higher... maybe late 40's to mid 50s, if not higher.
Celebrity offers a more reserved/refined atmosphere than RCI, and from your description of what you're looking for, should come close to fitting the bill.
I'm sailing on the Constellation, Aug.31 sailing, and will be filing daily stories from the ship, with pictures, to CruiseMates for a Virtual Cruise Report. You'll be able to follow along during the progress of the cruise, and see lots of pictures of the ship as well.
I've sailed with Celebrity on three occassions. Each sailing had a nice mix of ages. We are in our mid-40's and felt very comfortable. I agree with Kuki...Celebrity sounds like it might be what you are looking for.

Celebrity is much more sedate than either CCl or RCI. I saw very few kids onboard my one Celebrity cruise and the average age was in the 60's. Keep in mind that my cruise onboard a Celebrity ship was a 11 day which tends to bring an older crowd anyway. Service on Celebrity was white glove but it was very quite, more than we like.

It all depends when you are cruising in February. Most school districts have mid-winter vacation in Feb.... so you just may have more children on your cruise than you anticipate.
7-night itineraries attract more families than 10 or 11 night itineraries.
I picked a cruise in April... after the schools were back in session... 8 nights on Millennium and there were too many children to suit my taste.
If I had to pick a time .. I'd pick the end of January...
We just got back from Alaska on the Mercury. Average age was 48-50. The children's program had about a dozen little ones tagging along, and the teen program had about 20. There were very few children, but we did come across one cute little guy, about age 10, who was directing us when we were lost. He seemed to know his way around the ship quite a bit. We ran into him a couple of days later, and found out that he has been on the Mercury for 3 weeks - his uncle works on it and this was his summer holiday!
