You're right on the money, Mike. The last line ("How do you know?"), directed at Redford;s character, was spoken by another well-known actor . Do you remember who that was?
As for the "fat old man" line, the speaker was "The Duke" and the movie (another of my favorites) was "True Grit". What a great film!
Here's a couple of more, one really easy and the other perhaps not so memorable.
1. "Roads? Where we're going we dont need roads!" Hint: This became sort of a cult film.
2. "Maybe I'd better stay with you guys a little bit longer." Hint: Hollywood tough guy.
If you want more, as Jimmy Durante (who?) would say, "I got a million of 'em!"
Good work, CMs. The one you didn't get (Maybe I'd better stay with you guys...) was spoken by Nick Nolte in the closing scene of Three Fugitives as he watches the hapless Martin Short taken hostage by a bank robber. A truly funny movie, with Short & Nolte outdoing themselves all the way!
