Depends on your personal likes and dislikes. Six people at one table eating the same food could have six different opinions. In my opinion you can always find somethings you like and some you do not. I can assure you, you will not go hungry.
I've always been impressed w/Carnival's food, both quality and presentation - in the dining room. I don't have any meals at the Lido buffet, however, so can't offer an opinion on that area. There is a very nice variety of entrees on every menu (always a seafood, a beef, pork, and poultry, and vegetarian)..., but should there be nothing to tempt your tastebuds, you can order a sirloin strip steak every night if you'd like. I saw someone do that on my last cruise, as he wasn't very adventurous. He didn't know what he was missing!!!
I have been on the Spirit and the food was wonderful. I am going on the Spirit again in November and look forward to the food. Many great choices for all tastes.

Was on the Spirit 12/01. We really enjoyed the dine room menus. Some of the best meals we have had on 10 cruises over nearly 35 years. We are big seafood or beef fans if this helps. We also really like the buffet options for lunch on the Destiney & Spirit class ships. In addition to the regular buffet offerings they have special areas for deli, chinese, pizzia, taste of nations (different each day) and a grill with chicken, burgers, dogs.
I was on the Spirit for my last Alaska cruise back in 2002. The food was generally good and they did have a nice variety. Their grill on the Lido is particularly good for lunch. I loved their Reuben sandwiches...made to order. Do be prepared for a line there. The grill is very popular and offered lots of nice hot sandwiches. Also, they have good pizza any time of the day too.
