I'm going on the Carnival Spirit in November. I heard that if you are not pleased with your meal in the dining room, you can order something else. Also, can you order more than one dessert?
nope....the waiters dont really care from what we've experienced with my aunt ordering like 3 main dishes and then like our table decided to split a few desserts amongst us in addition to our own individual desserts....cruise food you can't experience at home...splurge a little!
If you don't care for your entree, they will replace it with no problem. Also, if you would like a second entree, they will bring it to you, and even a third. They will only bring out one entree at a time, however...so on formal night, don't expect to order lobster tail as well as prime rib...one will be served first, and once you've finished, they'll bring the other. NO problem at all. (I usually have a lobster tail, then order another.) As for desserts, as the above poster said, you may have as many as you can consume!
Also, should there be no entrees that interest you (fat chance! )....you may order a sirloin steak or baked chicken, baked potato - any night ,even though they aren't on the menu.
Everyone at my table oredered 2 lobsters on formal night (except me, because I dont like lobster)..BUT..one night I couldnt decide between the creme brulee or a coffee flavored pie for dessert, so I asked for, and received both,
Even if you do like your meal - you can order as many as you want. I, personally, am a two dessert person:-) Portions are usually relatively small anyway, so even if you do have two (appetizers, entrees, desserts, whatever), it's not overwhelming.
Ha! I too will be making use of the gym! I'm glad to hear that portions are small, as I'm a taster. My boyfriend and I always make a point of ordering different meals so we can trade plates half way into the meal and get the taste of two meals each for the price of one
Another question... do you order everything at once or wait till you're nearly done with the first plate before ordering the next? Or, say you order everything at once, but get too full before the remaining plates are served is it ok to tell the waiter that you'd like to cancel the rest of the order? ...I don't want to appear tacky.

In my experience when ordering two entrees both entrees are brought at the same time. This is preferred by the waitstaff. This eliminates a long trip back to the galley or having to serve you a cold entree that has been held at the wait station.
Ordering of multiple desserts is a common practice.

Mike, this is just one circumstance where Carnival is inconsistent. I understand this is different on different ships. During a little chat I had w/the F&B director on my last cruise, he said the fleetwise policy is ONE entree at a time; however, waiters are eager to please and often ignore this policy. The policy was set in place to avoid waste, of course.
Like VS said in her post, she wouldn't want to be too filled to eat the other entrees that she has ordered ahead. I don't know why anyone would order 2-3 entrees at a time. The second entree will be brought out within 5 minutes.
I think that is one of the benefits of being on the late seating for dinner. Since there is a fair amount of leftover it seems the wait staff are more willing to serve it than let it go to waste. On my last cruise on Adventure of the Seas back in April, we were 9 adults and 3 young children and on formal night all 9 of us adults got 2 servings of lobster and my brother in law and me got 3 servings, without asking. The waiters just kept bringing them out as fast as we could eat them. And all throughout the cruise it was normal for many of us to get at least 2 desserts and they would always give my wife and my sister some dessert "to go". The waiters were wonderful in that respect.
On other cruises were we've been on early sittings waiters would give us repeat servings or 2 diffrent entrees if we asked, but they seemed more willing to do so on late seating, both on Carnival and RCI
