I also suggest trying the Chef's Galley for dinner. The menu does change - featuring items from the menus of the other restaurants but in the stye of the Galley's Chef. The night that my wife and I had dinner there, it was "Todd English" night. Frankly, I thought that the presentation was better than when we went to the Todd English restaurant. And although you do pay extra for the Chef's Galley ($30 per person), wine and champagne that is paired to the various courses is included at no extra charge.
