Sorry, Celebrity is the only line with a year round youth program that I don't have first hand experience with. They don't seem to want to promote their youth program and/or any infant services so I can't be of help.

We're booked on Infinity to Alaska next June and I'm wondering if we made the right choice, kid-wise. Two families and grandmom with kids ranging from 3 (twins) to 16. I was just reading reviews at cruisecritic.com, but no one had children. I'm especially worried about dinner. . .I don't know if my 3-year olds are going to sit through a 2 hour meal, but I don't want to eat at the buffet every night either. We were also looking at Princess and I think I might have to revisit that option.
Unless infinity is different Celebrity doesn't have a dinner buffet. They do have casual dining in the buffet area where you make reservations. Celebrity has a great kids program in the fun factory and in June it should have a fair number of children. Because there tends to be fewer children they are able to give more individual attention. The children seem happy with the program.
