Default which ship too take???

first let me say i have been on 2 cruises, both to alsaka on the carnival spirit and love it and the whole carnival experience. now i am planning a folaige cruise in oct of 2006 to the canadian east coast to hopefully see the leaves changing.

i have read great reveiws about the triumph for this cruise but what about the other cruise lines. i have no idea about them or if i would be happy on a cruise line that i have not sailed on. i do not like the idea of ''' free style dining'' so that might help make my decision. any help here will be appreciated.

i am open to all insights of other cruise lines besides carnival.
