I suggest you go to the bank and open another little savings account. Call it your cruise fund. Fill up your change jar and turn it in to your account when it gets full. How about making it a fun thing adding to the account for your whole family?
Life is too short to let the ship of your dreams sail without you.

Whenever I book a cruise, I ask my travel agent to charge my credit card on a monthly basis. Depending on the total price of the cruise, I ask her to charge $100, $150, $200, or $250 per month.
This way, when the final payment comes due, it's a very small amount. If you can afford a small charge against your credit card monthly, this is a good way to pay for your cruise without having that huge final payment.

Open a vacation account at the bank and put some into it every payday.

I agree with the others open a savings account; in addition have the bank transfer money from your checking to your saving account. Most bank will set up a transfer from the checking into the savings account on the same days of the month.
For example; if you get paid twice a month have the bank transfer $50 from your checking to your (cruise) savings account on the 1st and 15th of each month. If it happens automatically then you won't forget to do it. I had that when I had my Roth IRA and it worked great.

I too have a big jar with a stopper that has "Cruise Fund" painted on it. That and a new "cruise only" bank account should suffice. Believe me the change jar works. Last time I emptied it out there was over $300 in it. It was a lot of coin rolling, but was a nice surprise !

We always book at least 15 months out and we save change and start a special savings account to have money taken straight out of our paychecks, if you don't see it you can't miss it. The trips are well worth saving for.
I'm just a teen and only saving for my spending money on the cruise, but I give my mom $40.00 of each of my paychecks (so twice a month) and she puts it away somewhere that I am not aware of where it is (good plan or else i'd be 'borrowing' from it all the time) and doesn't let me take it out, this way i know i will have alot of spending money on the cruise this year me and my sister have our own room so have to pay our own accounts this year.
My suggestions would be the savings account, but if you are a bad saver then MAKE SURE you don't have access to it. Otherwise you will start 'borrowing' and that doesn't end up being paid back, believe me.
hope i helped
